I just want the option to have controller animations and completely disable button auto-hold. Please let me know if one or the other is already available.

In the main screen of the emulator touch the three bars button and then select settings and last touchcreen in the latter should appear those options (although I do not remember if this build had those options). By the way I recommend you use the Fz version of this emulator as it is more updated than the versions of here, look in playstore Mupen64plus Fz.
